Abstract

Mustard is a plant whose leaves are used as food, both in fresh and processed conditions. The purpose of this study was to empower the target women farmer group by making mustard greens ice cream. The problem found is that the mustard greens in Tulungagung Regency have not been used optimally, there are still many farmers who sell their crops in fresh form so that a lot of crops are wasted if they are not sold out. Farmers have not been able to utilize crop yields into products that have high selling value because there are no innovations in the use of agricultural products. Processing mustard greens into ice cream is an innovation to overcome this problem. The research method used is action research and counseling the best study results are proven through organoleptic tests. Through the extension design, the activities of processing agricultural products to make mustard ice cream are quite effective in measuring the increase in knowledge, attitude and skill levels so as to create welfare for farmers.
